Discover Torrevieja with Shopping Center Habaneras

Do you know how to cook the typical cuttlefish sangochao of Torrevieja?

Cuttlefish sangochao is a typical dish of Torrevieja. It is a cuttlefish stew with an unique flavour.

We teach you how to prepare it!

What do we need?

  • 1kg of Sepia
  • 500ml of white/pink wine
  • 3 new onions
  • 30gr of sprockets
  • 1 Nail
  • 1 bay leaf
  • Salt
  • Peppercorns
  • Extra virgin olive oil

To the kitchen!

  1. Cut the onion and poach it with a little oil over medium heat. To speed up the process, we can add a baking soda knife tip.
  2. While the onion is being poached, clean the cuttlefish and cut it into pieces.
  3. Add the pine nuts, peppercorns, cloves and bay leaves.
  4. When the pine nuts start to brown, add the cuttlefish and raise the heat to the top.
  5. Continue frying for a while and add the wine.
  6. Let it evaporate a little, add a little water, lower the heat and cover.
  7. Let it cook for half an hour covered and half an hour more uncovered.
